Recipes Using Herbs Can Create Tasty Appetizers

Recipes using herbs have become one of the most popular culinary options today. Many chefs from all over the world prepare different dishes using a variety of fresh and dried herbs. Many of you are growing your own herbs and learning to identify what herbs work well with certain dishes.

I have been using herbs and spices in many different dishes for years. I love experimenting with the different herbs and also using a variety of combinations in preparing one or more appetizers. I wanted to share a few of my favorite preparations using herbs in three different appetizers.

Many professional chefs spend hours experimenting with different herbs and spices to try to find the right combination for a wonderful culinary experience for their customers. Here is a photo page of eight basic culinary herbs I use a lot. Of course there are other basic herbs as well as specialty herbs for certain dishes. Appetizers are a great way to start a meal or have several appetizers for your entire meal. Here are three different herb base appetizers.

Shallot
Fresh Garlic













Garlic, Shallot, and Basil Sausage Balls.

  • One pound of fresh ground sausage
  • One shallot chopped finely
  • Three leaves fresh basil
  • One half to a cup breadcrumbs
  • Clove or two of fresh garlic
  • 1/4 cup of Parmesan cheese
  • 1/4 cup of favorite sharp or mild cheese, finely cut up
  • 2 tablespoons of white wine or cooking wine

Cut off the stem of each mushroom cap but keep the mushroom whole and hollow. Chop up the stems and brown with the sausage in a pan. In this recipe I sauté the shallot, garlic and basil separate from the sausage. Drain the sausage, and mix in a bowl the sausage, fresh herbs, bread crumbs and both types of cheese. Mix well and fill each mushroom cap with the sausage mixture. Add a little white wine or cooking wine to each cap. Bake at 350 degrees for fifteen minutes. Great on your favorite crackers.

Herb Walnuts

  • One pound of walnuts
  • Two tablespoon of butter and olive oil
  • Five tablespoons of fresh chopped rosemary
  • Pinch of Salt
  • One teaspoon of paprika
Melt the butter and oil in pan and add the walnuts. Make sure you coat them well. Add the rosemary, salt and paprika to the walnuts and mix well.

Bake at 325 degrees for twenty to twenty five minutes. Let them cool at room temperature and enjoy. The walnut appetizer is wonderful with your favorite evening cocktail. Stuffed Tomatoes With Rice, Basil And Coriander

  • Eight medium size tomatoes
  • One fourth cup of cooked rice
  • Two tablespoons of white wine
  • One clove of garlic
  • One half cup of sharp or mild cheddar cheese
  • One tablespoon of Olive Oil
  • One quarter teaspoon of crushed corriander seeds
  • Two leaves of basil
  • Optional - salt
Coriander Seeds
Cut off the tops of the tomatoes and take out the seeds. Finely chop the tops. Put the chopped tomatoes in a pan with the wine and simmer until tender. Drain the tomatoes. Mix together the remaining ingredients except the olive oil. Scoop the mixture into each tomato and drizzle olive oil over the top.

Bake at 350 degrees for fifteen to twenty minutes. Delicious in the summertime with fresh tomatoes from the garden. These three appetizer recipes are a fun way to start a dinner party or enjoy a few snacks using some herbs and spices.
