Seasoning Veggies, Poultry, And Meats With Natural Plants

Seasoning vegetables, poultry and meats with different herbs and spices can create mouth watering dishes for your friends and family. I have given you some information on different herbs and spices, but today I would like to share with you some ideas for what to use on some different types of vegetables, poultry and other meats.

Herbs and Spices have flavored different foods for centuries and today so many professional chefs around the world use many different herbs and spices daily. Households around the globe are beginning to understand the value in seasoning their vegetables and meats. There is no set herb or spice for any one dish. Below are some ideas for you to ponder when making certain vegetables and also some different types of meat.

  • Asparagus - fresh garlic, fresh lemon, ground mustard and thyme.


  • Broccoli - basil, fresh lemon, dry mustard, and sesame seeds.


  • Cabbage - caraway seeds, vinegar, Rosemary, fresh lemon, and oregano.


  • Carrots - parsley, bay leaf, oregano and a sweetener, such as fresh honey.


  • Cauliflower - parsley, tarragon and rosemary.


  • Corn - garlic powder, onion and paprika.


  • Green Beans - oregano, basil, fresh garlic and onion.


  • Collard or other greens - herb base vinegars, fresh garlic with olive oil.


  • Lima Beans - sage, fresh lemon, garlic and onion.


  • Fresh Mushrooms - either raw or sauté - fresh or minced garlic, diced onions, a red or white wine, rosemary and garlic chives.


  • Peas - white onions, parsley, oregano, and one of the mint family.(your choice).

  • Potatoes - there are so many different varieties you could use. diced onions, fresh garlic, rosemary, with oregano and chives.


  • Squash - most squash dishes do well by adding oregano, garlic powder or fresh garlic, sesame seeds and poppy seeds.


  • Sweet Potatoes - a favorite of the south, cinnamon and nutmeg with a little bit of cooking wine.


  • Tomatoes - basil is one of the best herbs, along with fresh crushed garlic, oregano, thyme and regular or garlic chives.
These are just a few ideas for some vegetables. I do use a lot of herb vinegars in seasoning cabbage and any type of greens. Collard greens, mustard, and dandelion work great using the herb vinegars. I will also use the commercial concentrated lemon juice but I really enjoy the taste of fresh lemon on many vegetables. Lets take a look now at different seasonings for fish, poultry, and other meats. If you are a vegetarian, you know you can substitute meats with kidney beans, lima beans, lentils, and peas.

  • Poultry - there are many different varieties of herbs and spices to use. Great spices are curry, ginger, allspice, dry mustard, cayenne or nutmeg. Herbs that work well with poultry are basil, garlic, sage, rosemary, thyme, tarragon, and chives.


  • Fish - one of the most popular herbs is dill and also adding fresh lemon. Other herbs and spices for seasoning fish are scallions, chervil, chives, basil, bay leaf, curry, mustard, and allspice. Lemon pepper also adds a nice flavor to fish.


  • Beef - Rosemary is one of my favorite herbs to put on a beef roast. Others that will compliment beef are basil, garlic, oregano, thyme, and onions. Spices that will do well with beef are chili powder, cloves, dry mustard, paprika, and black or white pepper.


  • Lamb - curry and mint are two of the most popular spices and herbs in seasoning lamb. Others are garlic, marjoram, onions, parsley, sage, thyme, and black pepper.


  • Liver - one of the favorites to go with liver is the onion family. You can also season with black pepper, dill and tarragon.


This is just a small sample of a few herbs and spices that could work for you. You can combine and experiment with different plant specimens and see what suits your palettes.
